Let the sun shine in! Greetings summer, we’ve been waiting for your debut. Whether sitting on our porch for an evening of relaxation or organizing a mega cookout for celebration, much of our summertime enjoyment comes from gathering together and eating. Entertaining is the staple of the season. How about welcoming the season with some fun and fabulous treats that are impressive, quick, and tasty, sure to satisfy and surprise any palate?
First, to quench your thirst, here’s a spectacular spin on the Moscow Mule. Instead of using whiskey, this lovely libation incorporates White Hennessey, ginger beer, and lime. So tantalizing, no cognac connoisseur or novice can resist. The presentation is also dazzling, as all mules should be served in a copper mug, keeping your ingredients cute and cold for consumption.
Let’s call this one The Cool Mule…
1 1/2 ounces Hennessey Pure White
1 tsp. Sweetened Lime Juice
Fresh Ginger (shaved)
1 ounce Ginger Beer
Here are the details on another mouthwatering remix that is sure to please, the Chicken Cheesesteak Egg Roll. This handheld, bite size, wow factor is not only simple to make, but a stylish and modern spin on a crowd-pleasing classic.
1 package of Wonton eggroll wrappers
1lb diced chicken breast
1 diced red and green bell pepper
1 finely chopped vidalia or sweet Spanish onion
Shredded mozzarella cheese
Salt & pepper to taste
Preparing the Filling:
Prepare the chicken breast filling earlier in the day or even the day before because you want to fill the wrappers with a cooled filling. Coat the bottom of your frying pan with a thin layer of olive oil. Season and sauté the chopped chicken breast over medium heat. Once each side of the chicken has browned a little, begin to add the chopped peppers and onions to the sauté. Cover and let steam the rest of the way through while stirring occasionally for about 15-20 minutes total. Set the mixture aside for cooling.
Luckily, nowadays you can find wonton wrappers in any major supermarket and don’t even have to travel to some specialty market for your preparation. Simply lay some wax paper on your work area and position your wrappers diagonally like a diamond for filling. Be sure to have a small cup of water in the area to wet the wrapper’s edges; that’s all it takes to seal the deal.
Add a halved slice of the Velveeta cheese to each wrapper, in the center. Once the filling has cooled and the flavors have settled, simply add the filling atop again to the center of each wrapper, being sure not to overfill. Then sprinkle the mozzarella on top for the last layer of goodness. Wet your fingertips in the water and carefully fold the wrapper like an eggroll; folding the bottom and top corners first and then the remaining sides to secure the wrap in place, like glue.
Frying to Perfection:
Place each of these scrumptious masterpieces into a deep fryer (preset to 350 degrees) or a sauce pan of piping hot preheated vegetable oil for frying. They brown very quickly (5 minutes tops), so be sure to watch closely and be ready with a skimmer spoon to remove from the pan once fully golden brown.
Once out of the fryer, let them rest for few a minutes on a paper towel and then transfer to a plate.
For presentation, cut each one in half on a diagonal. The cheese will ooze a bit and they will be the perfect size to grab and gab…the ultimate party pleaser!
