I don’t know about you, but as much as this beautiful weather excites me, what brings the biggest smile to my face is all the amazing summer gatherings with my crazy girlfriends! BBQ’s, park days, and countless Sunday brunch dates on a sunny patio are here! But to me, a good summer gathering is never complete without one thing–

”Good friends,” I hear someone say.
“A dope location.” Says another.
“I know ,Morgan, it’s amazing food.”

You all are too cute! But oh-SO-so wrong. To me, a party ain’t a party without a bomb SIGNATURE DRINK! Bring on the cocktails, baby! Let’s be real. So, I want to share my absolute favorite summer cocktails! It’s delicious, it has a kick which – *disclaimer* – may hit you a little later, and of course, it has a beautiful presentation that looks way more difficult than it really is (I GOT you, ladies!). Make this classic margarita and serve it with a fresh strawberry champagne popsicle that you can place in each glass. Oh my gawd! Champagne, tequila, and popsicles?! Don’t mind if I do!

Simply Delicious Margarita (yields: 6)

Margarita with Lime Slices
Lime wedge, plus 6 lime wheels for garnish
1 tablespoon coarse salt, for glass rims
12 ounces high quality blanco tequila
6 ounces Cointreau
4 1/2 ounces fresh juice from 2 limes
3 tablespoon of agave (If you like your cocktail a little sweeter; otherwise skip this step)
1. Run lime wedge around the outer rims of two rocks glasses and dip rims in salt. Set aside.
2. In cocktail shaker, combine tequila, Cointreau, and lime juice. Fill with ice and shake until thoroughly chilled, about 15 seconds (the bottom of a metal shaker should frost over).

Strawberry & Champagne Popsicles (yields: 6)
¼ cups Water
¼ cups Sugar
2 tablespoons lemon juice
1 pound of strawberries (approximately 1 standard grocery carton)
1 cup sparkling champagne

Strawberry Champagne Popsicles

In a small pot, add the first three ingredients and bring to a gentle boil until the sugar dissolves. About 5 minutes. Let cool.

Next, cut the stems off the strawberries and pop them in the blender with the cooled liquid until pureed. Add the champagne and stir by hand. (Do not reblend)

Pour the mixture into 6 popsicle molds and chill at least 6 hours, or overnight.

Place a lime wheel on each margarita and place a strawberry popsicle in each glass. Serve and get loose with your favorite girls!
